Saffron, The Vegetarian Eatery, Vegas’ newest vegetarian and vegan restaurant in Chinatown is open and ready to serve delicious high-end Southeast Asian cuisine to the locals. Inspired by a life changing experience in Vietnam, the colorful menu options are anything but ordinary. The delicious dishes and handcrafted cocktails are made from fresh, organic and mainly locally sourced ingredients.

“We wanted to create an accessible, high-quality vegetarian experience where the food was not only creatively fresh but also accessible to vegetarian skeptics,” said Arianna Pittard, CEO of Saffron, The Vegetarian Eatery.We want to offer an immersive experience and an atmosphere that is calm and intimate. In addition to the seductive ambience, guests experience the first-class service of the all-star team at Saffron Spearheaded by Chef Louross Edralin, a respected chef with more than 20 years of experience who also participated in the fourth season of Hell’s Kitchen, the care awaits you To taste in every carefully curated dish. Chef Edralin uses fresh, organic produce from the local Vegas farm Sundown Mushrooms, including gourmet mushrooms known for their health and medicinal benefits. In the HBO Max hit show Legends, Donnell Ingram, the lead mixologist at Saffron, presents his guests with unique cocktails made from fresh and organic products.

The guests are greeted in Saffron by a hand-carved sandstone statue in the free-flowing pond in the middle of the room – directly below the hand-made flower sculpture. The walls are decorated with hand-carved wooden tiles with intricate patterns that were sourced from an experienced trader in Vietnam.

Comfortable seating niches are upholstered in deep velvet shades on the walls, offering guests an intimate seating experience. Custom-made chairs imported from Vietnam are set up throughout the center of the restaurant, creating a contemporary feel that is perfect for an evening on the town. In addition, private dining is available on the second floor of the property for guests who want an exclusive experience.

  • Appetizers-Try the pumpkin and coconut soup, filled with spicy autumn dishes with roasted Japanese pumpkin with coconuts and leeks, garnished with fried tri-root shrub, lotus chips, fried basil and chive oil, or the grilled watermelon salad with watermelon, pickled lotus root, Heirloom tomato, spring mix, julienned carrots, champagne vinegar, broken black pepper and garnished with a spicy mayo dressing.
  • Shared bites—If you like hearty bites, the Salt and Pepper “Chicken” is just right for you. This twist on the classic roast chicken contains perfectly flavored Black Pearl mushrooms to mimic the fans’ favorite dish. The flavored mushroom dumplings are served with fried oyster mushrooms, shiitake mushrooms, mushrooms, carrots, lentils, grated tofu and served with a ginger soy sauce and vegetarian dashi sauce. The Beet Carpaccio is the perfect joint dish with thinly planed, roasted beets, layered with cherry tomato confit, pickled Yali pears and mango coleslaw, topped with micro Thai basil and coriander in a ginger soy sauce.
  • Main course The delicious Saffron Red Curry dish consists of homemade curry, eggplant, sweet potatoes, green peppers and zucchini, garnished with chickpea tempura pumpkin blossom and served with jasmine rice. If you like spicy dishes, get the Boy Chay Cay Noodles – this dish consists of plain tofu beef sautéed in star anise and cinnamon chilli oil, tossed in hand-cut rice noodles, garnished with pickled napa cabbage and micro- Thai basil and lime.
  • Desert- Enjoy the delicious vegan cheesecake after your meal for the ultimate sweet treat. The cheesecake is available in chocolate or New York cheesecake, topped with mint-whipped cream, strawberry reduction and a cinnamon-sugar dusting. The Mango Sticky Rice is equally popular with all fruit lovers and contains Ube and coconut syrup, topped with brunoise mango, brown coconut sugar and roasted coconut.
  • Cocktails-The Asian Pear Mule comes with pear vodka, fresh lime juice, mixed Asian pears, ginger beer and a splash of ginger syrup, which gives a fruity note with every sip. The Empress Gin Sidecar is a lively cocktail with Empress Gin, Cointreau, fresh lemon juice and simple syrup that is shaken perfectly. If you are a sake lover, try Yoigokochi Yuzi – Miyakobijin, the intensely vibrant and refreshing Yzu sake in the bottle, known as “Sunshine in a Bottle”.
