Carver Road Hospitality Sets December 30 Opening For Carversteak At Resorts World Las Vegas

Carver Road Hospitality presents the luxurious Carversteak steakhouse at Resorts World Las Vegas on December 30th.

The 14,500 square meter carver steak is the first Las Vegas Dining concept designed and developed by Carver Road Hospitality with a spacious, 23-meter-high bar made of cut quartzite, a spacious outdoor bar and a dining terrace, two private dining experiences – The Knife Shop and Whiskey Room – and a noble main dining room; with a menu designed by the renowned chef Daniel Ontiveros, previously three-star Michelin restaurant Joël Robuchon Restaurant, Thomas Keller Bouchon Bistro, Michael Minas Nobhill Tavern and Scotch 80 Prime, among others.

“When developing the carver steak story, we started at the source: dry-aged American cuts and Japanese-certified Wagyu steaks,” explains Chef Ontiveros. “Our ingredients get everything moving – from cooking to presentation – and I can’t wait to bring these incredible dishes to life for our guests.”

One of the highlights of the carver steak menu is Chef Ontiveros’ Wagyu Tomahawk Rib Chop, a 42 oz. cut, lobster en croûte, one whole Maine Lobster with puff pastry shell, accompanied by paprika and cognac cream; and a selection of raw food bars, including Hamachi Crudo, alongside a wide selection of starters, side dishes, sauces and salads. The full menu will be announced in the coming weeks.

Chef Ontiveros’ menu is accompanied by a cocktail program developed by Master Mixologist and Vice President of Beverage and Hospitality Culture at Carver Road Hospitality, Francesco Lafranconi. Among its most anticipated offerings: the house Gibson Martini, a gin or vodka-based cocktail complemented by savory fortified dry vermouth and presented with a variety of homemade pickled fresh pickled onions to add depth and complexity; Mr. Lee Manhattan, which replaces rye whiskey with Nikka Coffey Grain Japanese Whiskey and Lillet Apéritif instead of sweet vermouth, is presented with Seville Orange bitters and stirred to perfection with an optional mist of PX Sherry; and The B Signal, an agave-centered old fashioned with a nifty clase of Azul Reposado and Tequila Amaro Montenegro to bring a herbal flavor with every sip, enriched with citrus and chocolate bitters. Carversteak also offers a world-class wine list and curated vintage whiskeys, grape brandies and matured tequila collections, as well as a herb garden on the restaurant’s terrace for special craft cocktails. Guests will also enjoy a cocktail cart at the table that serves classic gin and vodka martinis and their variations.

Carversteak was created by the award-winning international design studio DesignAgency and features a mid-century modern aesthetic with a rich palette that draws from the landscape of the Las Vegas.
