The 14,500 square meter restaurant, the largest luxury steakhouse in town and the resort’s only steak-focused outlet, offers a contemporary take on the classic steakhouse experience.

Carversteak, designed by the award-winning international design studio DesignAgency, offers a mid-century modern aesthetic with a rich palette ranging from. was inspired Las Vegas Landscape. The design team conceived a sensory experience for the guests with a number of original highlights such as The knife shop and Scottish room, both of which serve as private dining rooms. A sprawling 70-foot bar made of cut quartzite stone leads to the main restaurant and the 3,500-square-foot terrace with bar, dining and lounge gardens overlooking the Las Vegas Strip. In addition to a state-of-the-art light and sound system, the interior of the restaurant serves as a gallery for the selection of rotating digital and traditional works of art.

The carver steak philosophy is based on a sustainable ethos by enriching the classic preparations of steakhouse staples with seasonal ingredients. Thick American dry-aged cuts will hit the headlines the steak program, accented by global artisanal beef producers and Japanese-certified Wagyu cuts. Look forward to typical dishes such as a 12-hour Dragging– Roasted Prime Rib and Crusted lobster thermidor, and playful items like Caviar poppers and Wagyu Mini Cheesesteak Bites. There will also be plenty of vegan options in abundance.
Carversteak’s beverages program, led by Francesco Lafranconi, Vice President of Beverage and Hospitality Culture at Carver Road Hospitality, will feature an extensive collection of accessible wines as well as a curated whisk (e) y collection for in a polished, along with some of the most coveted vintages Tasting room. The mixology experience on the terrace will present an “avant garden” spin on classic and modern cocktails that are influenced by the in-house herb garden and include a collection of mint varieties.
