Resorts World Las Vegas just got a new luxury steakhouse.
Just in time for the start of 2022, Carver Road Hospitality is opening the highly anticipated luxury steakhouse Carversteak at Resorts World Las Vegas on December 30th. The opening date is a deliberate start to the New Year’s Eve weekend on the Las Vegas Strip.
The sprawling restaurant spans 14,500 square feet and features a sprawling 70-foot quartzite stone bar, large outdoor bar and dining terrace, posh main dining room, and two private dining experience rooms called The Knife Shop and Whiskey Room. Its mid-century modern design was created by the award-winning international design studio DesignAgency.
As the first dining concept from Carver Road Hospitality in Las Vegas, the company set high standards. The menu of the Carversteak comes from the renowned chef Daniel Ontiveros, who was previously among others the three-star Michelin restaurant Joël Robuchon, Thomas Keller Bouchon Bistro, Michael Minas Nobhill Tavern and Scotch 80 Prime.
“When developing the carver steak story, we started at the source: dry-aged American cuts and Japanese-certified Wagyu steaks,” says chef Ontiveros. “Our ingredients get everything moving – from cooking to presentation – and I can’t wait to bring these incredible dishes to life for our guests.”
Specifically, the menu features a 42-ounce cut Wagyu Tomahawk rib chop; a whole Maine lobster wrapped in puff pastry paired with red pepper and cognac cream and raw bar products like Hamachi Crudo. The full menu will be announced shortly.

The cocktail program accompanying the menu was developed by Francesco Lafranconi, Vice President of Beverage and Hospitality Culture at Carver Road Hospitality. In addition to specially prepared cocktails, Carversteak offers a world-class wine list, curated vintage whiskeys, grape brandies and matured tequila collections.
Artisanal cocktail highlights include the house Gibson Martini (which can be gin or vodka based and served with a variety of homemade pickled fresh pickled onions); Mr. Lee Manhattan (Nikka Coffey Grain Japanese Whiskey, Lillet Apéritif, Sevilla Orange Bitters) and The B Signal (an agave-centered old fashioned with Clase Azul Reposado Tequila, Amaro Montenegro, citrus and chocolate bitters). In addition, guests can enjoy a martini straight from the cocktail cart at the table or herbs in their respective drinks straight from the herb garden on the terrace.
