For starters, the French gourmet restaurant has a new head chef, Dameon Evers, who said he was planning a “flawless dining experience”. One look at his menu and you know how serious he is. Start with small bites in the tasting area, especially Hawaiian kampachi highlighted by small radishes, pineapple mint and koshihikari rice, as well as ricotta gnudi, which is so fragrant with consommé royale, parmesan and white Alba truffles. And vegetarians can rest assured, with a large portion of the menu devoted to meatless dishes, including red kuri pumpkin veloté with podi spice, parmesan fondue and black winter truffle, and strawberry and milk with Harry’s berries, Sicilian pistachios and orange mint .
