Chef Todd English Announces Opening Of Olives Restaurant At Virgin Hotels Las Vegas

Four-time James Beard Award winner and celebrity chef Todd English today announced the opening of its newest restaurant, Olives at Virgin Hotels Las Vegas, part of the Curio Collection by Hilton.

After running his fiery, fun, and first Las Vegas restaurant, The Beast, which was in the immersive arts adventure land AREA15 last year, English partnered with design firm ICRAVE to redesign the iconic Boston restaurant, Olives, which premiered in 1989 design The proven interpretation of the star chef’s Mediterranean cuisine. The Olives at Virgin Hotels Las Vegas grows together with the Olives family and joins the sister restaurant Olives in the Bahamas. English plans to open additional Olives locations in New York City, Los Angeles and Dallas.

The opening menu at Olives features classics as well as updated seafood dishes and Italian inspiration, all with fresh farm ingredients and incredible flavor profiles. Starters include beef carpaccio with gorgonzola hash browns and spring onion cream; Nantucket Bay scallops with creamy chestnut risotto and orange vinaigrette; and sippin ‘bowl of mussels with creamy whole grain mustard and grilled Tuscan bread. It wouldn’t be an English dining experience by Todd without delicious flatbreads: figs and prosciutto with fig jam, gorgonzola and prosciutto; Portobello with wild mushroom puree, fontina and truffle, to name just a few. There are beautifully handcrafted pastas galore, including agnolotti with lemon ricotta and veal Bolognese and bucatini with peeled Maine lobster, plain butter and mashed cherry peppers.

The cozy space with an intimate dining room with 185 seats and a stone and steel stove-top kitchen surrounds an elegant, raised bar with upscale lounge areas made of stone, terracotta, wood, cork and hand-glazed art inspired by the Renaissance. Olives is a five star restaurant like no other in Las Vegas
