Exciting new restaurants keep popping up outside of the Las Vegas Strip, further accelerating and diversifying the city’s dynamic culinary landscape. Downtown Main Street has been a hotbed of interesting new bars and restaurants in recent years, and the latest addition is Coastal tavern (702.749.0091), a Mediterranean travel destination with a modern design and a rooftop bar where live bands take the stage at night. The place feels like a cozy hangout for local artists and artists, and the menu offers light but tasty dishes with French, Spanish, and Greek influences. The Arts District is suddenly full of distinctive venues, and Taverna Costera adds even more depth to this increasingly popular part of the city.

Out in the far west near the Summerlin community, a very popular Los Angeles store has taken root in Las Vegas. Dave’s hot chicken (702.843.5455) recently debuted at a former fast food eatery on West Sahara Avenue, and the drive-through window line has been wrapping around the parking lot since day one. Hungry Hot Chicken fans can’t get enough of the crispy fried tenders and sliders, which come in seven different seasoning levels. Fortunately, there is always a constant supply of cool dill pickles to put out the fires that these addicting poultry are making.

And in the far south-west valley, a lesser-known Mexican dish is being celebrated and taken to new heights in the recently opened one Gabis Gorditas (702.268.7466). This quick-casual spot on Blue Diamond Road gives Mexican cuisine a healthier twist by using only natural, high-quality ingredients and handcrafted tortillas for its eponymous gorditas, filled with spicy picadillo made from beef, pork, and Peruvian purple potatoes or slow cooked chicken tinga. Grab a side of Hawaiian-style poke or pickled cactus salad and expand your horizons.

It seems like there’s always something new going on on the Strip in Sahara Las Vegas that continues to renovate and add new options, like Zeffer’s updated cafe concept opening this month. But with Bazaar meat from José Andrés (702.761.7610), the landmark of the resort from the legendary chef of the same name, the newest element in the kitchen is head chef Candace Ochoa. She’s worked with Andrés for more than a decade, and now that she’s running this Vegas institution, Ochoa adds her own twist to Bazaar’s beautiful mix of experimentation and classic prep. If you haven’t eaten here recently, it’s time to go back.

Speaking of real destination dining: There is nothing new, but it has just opened in Park MGM. NoMad Las Vegas had previously reopened its swanky bar and lounge, but only recently reactivated it The NoMad library (702.730.6785), the stunning dining room that serves a luxurious take on American classics like Oysters Madison, seared scallops with minestrone and Garganelli noodles, marrow-crusted filet mignon, and other creations from the head of Chef Michael Rellergert. Between the food and the atmosphere, there is nothing quite like NoMad.
