The weather is getting cold, even in Las Vegas, and our cravings are turning back to tasty foods that warm and soothe the soul as well as satisfy our appetite.
There are many restaurants in Las Vegas that focus on seasonality and dedicate their service and style of cooking to helping you hit the right place at the right time of year. If this is the experience you’re looking for, one of the best places to start is a legendary dining room that recently reopened after a long absence. The circus (702.693.8100) at the Bellagio is one of the most prestigious restaurants in the city’s history, receiving Michelin stars, AAA Five Diamond Awards and the Forbes Travel Guide’s five-star rating. Open again for dinner Thursday through Saturday, under the direction of the new chef, Dameon Evers, the fine French favorite offers pitch-perfect dishes such as Hawaiian kampachi with pineapple mint and petit radishes, Hudson Valley foie gras and hearty almond cake with duck confit and rose celery, and dry -Aged Mishima Ribeye with ruby beetroot and caramelized onion jus. It’s amazing to see this place in action again.
Seeing everything from the loved one is also amazing Top of the world (702.380.7711) Restaurant at The STRAT, but while this destination is known for its top views, the cuisine is constantly changing and improving. The new autumn and winter menu focuses on the flavors of the season with dishes such as roasted beet salad in a brown sugar vinaigrette, braised shoulder of lamb with cumin yoghurt, cauliflower gratin with smoked Gouda cream and Parmesan breadcrumbs and Harris ranch filet mignon with your choice stuffed roasted lobster or king crab poached in butter.
For a more casual kitchen with soulful flair, immerse yourself in Yardbird Southern Table & Bar (702.297.6541) at The Venetian. The fabulous roast chicken is the foundation of this southern influenced hotspot, but other must-eats include the oyster casino with andouille sausage and corn bread, truffle agnolotti with lemon ricotta, grilled and blackened salmon with basil pesto and shrimp and grits that have a kick of roasted tomatoes and Virginia ham. This bird has a lot of delicious tricks up its sleeve.
Las Vegas neighborhood restaurants are equally adept at fall dishes. The Spring Mountain Road is acclaimed Sparrow + wolf (702.790.2147) recently named aspiring Travis Schultz as the new Chef, and his collaboration with Chef / Owner Brian Howard has spawned new dishes such as oxtail hummus with crispy chickpeas and curry oil, charcoal-fired Spanish octopus with a chilli and garlic crunch and Pork with black pepper and honey, served with foie gras and plantains.
In Summerlin, Hearthstone Kitchen & cellar (702.797.7344) got it okay on behalf of the restaurant; This is the place to meet up with friends, relax, and enjoy oysters, pasta, steak, and more. Popular offerings on this rustic yet sophisticated menu include French dip with prime rib, braised short rib, and Calabrian chilli pizza, as well as fried chicken with arugula salad.
And in the quaint southwestern neighborhood of Mountain’s Edge, an Italian town Locale (702.330.0404) brings locals and Vegas visitors to festive family dinners to pre-empt the holidays. The Sunday Sauce Pork Ragout Gnocchi and the Butternut Squash Cavatelli with Coffee-Roasted Pepita Seeds and Whipped Ricotta Scream for Autumn Happiness, but you can stick with classics like Chicken Parm and Rigatoni alla Vodka if that’s the mood.
