One of the biggest strip restaurant openings this or every year has arrived at Caesars Palace. The latest culinary innovation from celebrity chef Bobby Flay is Amalfi (702.650.5965), which aims to whisk guests away to the Mediterranean Sea for a fresh and vibrant taste of the southern Italian coast. Flay fell in love with the region and its food after years of traveling and exploring, and that inspired him to transform his acclaimed Mesa Grill at Caesars into this new rustic yet elegant experience. Check out the fresh seafood display, and consider sharing a whole charcoal-grilled fish as the centerpiece of your feast. Flay did it again!
A more storied Italian restaurant right on the Strip serves up some fresh offerings. The legendary Ferraris (702.364.5300) on Paradise Road across from Virgin Hotels Las Vegas recently launched an extensive selection of seasonal spring dishes and small plates for dinner or “ora sociale” happy hour. Discover the Fagottini Bresaola, air-dried filet mignon with ricotta and Parmigiano Reggiano cheese, marinated artichokes, rocket and lemon; tender spring pea risotto with mint and creamy burrata; or freshly prepared gnocchi with basil pesto, sun-dried tomatoes and pecorino cheese. For a snack together, the Romagna pizza with rich mortadella, ricotta and pistachios is a classic crowd puller.
Speaking of making everyone happy, Dick’s last resort (702.597.7991) has been doing just that at Excalibur for more than a dozen years with energetic service, massive margaritas and fun food based on tavern classics such as steaks, burgers and barbecues. Now you can double up with Dick’s brand new downtown location on the first floor of the Neonopolis entertainment complex on the eastern edge of the Fremont Street Experience. It goes perfectly with the original Vegas drag and the party is just getting started.
While in the area be sure to check out the hippest new restaurant downtown and definitely get hungry. Soulbelly BBQ (702.483.4404) comes from the head of James Beard Award nominee and top chef competitor Bruce Kalman, who smokes brisket, turkey, pulled pork and spare ribs and some of the best meat dishes in town alongside salt and vinegar chicharrones, Pimiento cheese dip served, German potato salad and kale. Locals and other Vegas chefs have already discovered this new gem, and now it’s your turn to visit the Arts District and see what all the hustle and bustle is about. Besides, who doesn’t love BBQ?
Back on Las Vegas Boulevard, another new seasonal menu has appeared. Gordon Ramsay Steak (702.946.4663) at Paris Las Vegas added spring dishes for your rating, including seared Hudson Valley foie gras with smoked almond granola and white strawberry balsamic; pan-fried salmon with morel mushroom cream, fire-fried artichokes and fava beans; and Colorado rack of lamb with Manchego polenta cake and trumpet mushrooms. The man behind Hell’s Kitchen always ensures that his Las Vegas restaurants are kept to a high standard, and this renowned steakhouse has a lot going for it.
