Javier’s in Las Vegas is Mexican cuisine on a whole other level

The furnishings at Javier’s immediately set the mood – dark tones, opulent wall art, wide, leather-lined niches and a “tequila tree” immediately make you want to take a seat and use everything that Javier’s has to offer. And make sure to start your meal here with one of Javier’s signature tequila-based cocktails. The cocktail of the same name here mixes Patron Reposado Tequila and Grand Marnier, while Aroma De Mujer mixes silver tequila and Chambord for a unique sip. For a lighter sip, try the pepino, a silver tequila with agave nectar, cucumber and fresh lime juice. Pair any or all of these cocktails with starters like the Trio de Ceviche (with meat of your choice), Empanadas de Camarón stuffed with prawns, Rajas, Crema Mexicana and Salsa Quemada or Queso Fundido, a decadent mix of cheese, onions, mushrooms, Chorizo ​​and Chipotle.

Mains here are all your favorites like chili verde and carnitas, but poultry fans should try Pollo Josefina, a bone-in chicken breast in a creamy chipotle sauce with mushrooms and onions. Another highlight is Cabo Azul, a lobster enchilada from Maine and a poblano chili stuffed with prawns and dungeness crabs, as well as an ensenada-style prawn taco. Another highlight are chilli negro (pictured), braised Angus short ribs in chilli negro sauce with micro-coriander.

If your taste is more along the surf-and-turf route, be sure to try Carne y Camarónes, an 8-ounce filet mignon served with two Mexican wild white prawns fried in a garlic butter sauce. Vegetarians also have a choice here, including enchiladas filled with sautéed zucchini or spinach.

Desserts range from churros to flan to ice cream, but if you’re feeling adventurous, try the Pastel de Guayaba, a guava cheesecake with whipped cream.
