Perhaps the best food in Las Vegas is one that not only offers you the best ingredients in an upscale setting, but the experience is also stimulating and refreshing. The Jean Georges Steakhouse at Aria strikes that balance, and despite the name, this is a restaurant where you can partake in a myriad of unforgettable dining experiences.
The first thing that strikes you about Jean Georges Steakhouse is the look of the dining room. There are no hard lines here; only soft, cozy curves. The entire space flows and has an ambience that invites you to stay for as long as you want and trust us you will want it especially when you start trying signature cocktails. Japanese whiskey fans will love the Japanese Old-Fashioned, in which the spirit is enhanced by Demerara sugar, ginger and bitters. Vodka lovers have the choice between the orange and elderberry cosmopolitan with accents of cranberry and pineapple, the espresso martini, the coffee liqueur and espresso combined for a kick and the JG Vesper, where gin, aperitif and lemon lift the mood.
The classic starters you’d expect are all here – iceberg wedge and Caesar salads, bacon wrapped prawns, and grilled octopus – and they all shine. Sometimes the familiar is a great way to start a meal! But this is a steakhouse, and you might want to be more adventurous and try the Japanese Wagyu Carpaccio, which is so flavorful and served with black truffle fritters. It’s meant to be shared, but you may find that you want it all.
If you want steak with your main course, we certainly can’t blame you. After all, all steaks are of the highest quality and are all grilled on sustainable apricot wood and mesquite, refined with rendered beef fat, sea salt and broken pepper. Whether you try an 8-ounce Filet Mignon, 8-ounce Ribeye Cap from the Mishima Ranch, or 3, 6, or 9-ounce A5-certified Kobe beef, you’ll be happy with your choice, especially if you have it with king crab combine legs, diving clams, or bone marrow.
However, be sure to scan the menu for other directions that you can go. The crispy organic chicken, served with spinach and spicy sauce, is just as filling as the steamed halibut with green olive dressing, spinach and shallot crackling. The pages here are again some of the classics you would expect but with the touch of Jean Georges you know they will be unforgettable. Choose from grilled asparagus, sauteed corn, creamed spinach, Yukon Gold mashed potatoes and much more.
You’ll find a wide variety of dessert choices here, including New York-style cheesecake with sour cherry sorbet, Valrhona warm chocolate cake with vanilla ice cream, and a selection of market citrus fruits, accompanied by yuzu cream, white chocolate, and fruit.
