Nobu Matsuhisa opens his third Las Vegas restaurant at Paris Las Vegas in early 2022

Las Vegas just can’t get enough of Nobu Matsuhisa and its fusion cuisine, which blends traditional Japanese dishes with Peruvian ingredients. While the chef already has Nobu at Caesars Palace, attached to his first hotel, which opened in 2013, and Nobu at Virgin Hotels, he’s now planning to open a third location in Paris Las Vegas in early 2022. The restaurant takes over the former Sekushi room on Le Boulevard next to the Café Americano and opposite the hotel elevators.

Matsuhisa opened his first eponymous restaurant in Los Angeles in 1987 and met actor Robert De Niro while eating. The couple became friends, and in 1994 Matsuhisa teamed up with De Niro, restaurateur Drew Nieporent, and investor Meir Teper to open Nobu restaurants, making their first debut at TriBeCa in New York City. The brand now has 17 locations in the USA and 30 other international outposts.

Matsuhisa’s indelible mark on the culinary world includes his signature dishes like miso-marinated black cod, rock prawn tempura, yellowtail sashimi with jalapeño, and king crab tempura, many of which can be found on every high-end Japanese menu today.

Nobu opened its first Las Vegas location at the Hard Rock Hotel in 1995 when the resort debuted on the east side of the Strip. In 2020 the hotel closed for renovations at Virgin Hotels, but the restaurant returned with a remodel and its collection of Japanese whiskeys when the resort debuted last March. Meanwhile, Matsuhisa wanted to keep its employees busy and opened a temporary location in Bally’s Las Vegas, but it closed in March 2020 when the state shut down non-essential stores to slow the spread of COVID-19.

In 2013, the Nobu team unveiled their first hotel, complete with the world’s largest Nobu at the base. It was the first time Nobu offered teppanyaki tables. Upstairs at the hotel, customers can order room service from a Nobu curated menu that includes his take on a burger.

The renovations for Nobu don’t end with a new location in Las Vegas. The Nobu Hotel at Caesars Palace plans to refresh its 182 multi-million dollar guest rooms and public areas, which should be completed by the end of 2021.

The Paris refreshments include Vanderpump à Paris by Lisa Vanderpump of Vanderpump Rules and Real Housewives of Beverly Hills. The new lounge is a continuation of the Vanderpump Cocktail Garden at Caesars Palace with quirky cocktails and lush Parisian decor by Nick Alain. The Vanderpump à Paris is located next to the Paris Las Vegas reception.
