It’s no surprise that there are a multitude of Las Vegas eateries out there offering an upscale sushi experience, but you might not realize that some of the highest quality dishes in this category are served in refined, comfortable settings outside of the major casino resorts .
Yui Edomae Sushi (702.202.2408) in the Chinatown District of Las Vegas is known as one of the best restaurants of its kind in the country. Chef Gen Mizoguchi revolutionized sushi in Las Vegas when he opened Kabuto on Spring Mountain Road in 2012, before taking the next step with Yui, where rare fish from Japan is regularly flown in and served as simple, exquisite bites in special tasting menus. This memorable meal includes some of the most pristine sashimi you will ever try, as well as hot and grilled foods, with every bite that leaves a lasting impression.
The same quality in a slightly less formal atmosphere can be found in the restaurant of the former strip hotel chef John Chien Lee Japanese restaurant in Soho (702.776.7778) in the southwest valley. Once an insider tip in local gastronomy, Soho is now a popular place for sushi and seafood innovations such as Otoro from bluefin tuna with foie gras, cured Atlantic salmon with poached quail egg, Kumamoto oysters with uni and ikura and many more plates. Look for specialties and fresh fish while dining at Soho and place yourself in the capable hands of these creative chefs.

When it comes to sushi Nobu MatsuhisaThe name’s top of the list, and there are two prominent Nobu locations that create this fantastic foundation in Vegas. The original location at Virgin Hotels Las Vegas (702.693.5090) was recently renovated along with the resort and is the rare Vegas restaurant that survives and thrives despite major changes to the entire property. It remains one of the best places in town for an intimate, customized meal with plenty of chef interaction and Nobus signature creations like flavorful tuna with crispy rice, black cod with miso, and creamy, flavorful rock shrimp tempura. Caesars Palace (702.785.6628) is home to one of the largest Nobu restaurants in the world – not to mention the very first Nobu Hotel – and this regal dining room brings all of these classics to your table, as well as teppan offerings and an extensive cocktail menu and sake selection and much more.
“Iron Chef” Masaharu Morimoto is another legend who couldn’t wait to hit the Las Vegas Strip. Morimoto Las Vegas (702.891.3001) at MGM Grand is one of the city’s epicentres for sushi and sashimi, where a team of specialist chefs practice traditional techniques to prepare the finest fatty tuna, freshwater eel, yellowtail, Japanese red snapper, and other popular and rare varieties. Morimoto also serves amazing pasta dishes, top notch steaks and entrees such as crispy whole fish with papaya salad and kakuni pork and caramelized rice cooked at the table. It’s a complete experience, but one of a kind in Las Vegas.
