Restaurants may be slowing down to open in 2021, but a number of big names and fan favorites are already planning to debut this spring. Virgin Hotels is bringing 12 new dining options to the former Hard Rock Hotel, while Caesars Palace is getting a new Bobby Flay restaurant and sports bar. The Venetian land Estiatorio Milos, which moved from the Cosmopolitan of Las Vegas. David Chang has a new spot in the Cosmopolitan. Jungfrau Hotels

Virgin Hotels will open in 2021 and the resort is continuing to remodel the former Hard Rock Hotel in east Las Vegas. Three hotel towers have more than 1,500 rooms and suites; a 60,000 square foot Mohegan Sun Casino operated by Mohegan Gaming & Entertainment; a 5 acre pool with an event lawn; Live music with space for 4,500 people; a showroom for 650; and 12 dining outlets. Dining options include the return of Todd English’s Olives; Kris Yenbamroong’s Thai Gem Night + Market in Los Angeles; the legendary Nobu sushi restaurant; Michael and David Mortons One Steakhouse; Kassi Beach Club, now Kassi Beach House, by restaurateur Nick Mathers; Casa Calavera from the Hakkasan Group; as well as sports entertainment, daytime and nightlife Money, baby! from the Clive collective. Estiatorio Milos, Costas Spiliadis’ Greek seafood restaurant, unveils its new space in the Venetian. The 10-year-old strip veteran left the Cosmopolitan of Las Vegas last year to relocate his Mediterranean-inspired seafood menu to the Venetian’s range of restaurants. Milos takes over the 13,624 square meter Aquaknox fish restaurant with shutters. Milos flies in its seafood daily from the Mediterranean Sea and then presents it in the restaurant’s fish market, where customers can choose their evening meal. Whole fish in sea salt, tuna, lobster, salmon and octopus are on the menu, along with the Milos Special, a tower of deep-fried, wafer-thin zucchini and eggplant with tzatziki on the bottom and inside.

After 16 years, Chef Bobby Flay’s Mesa Grill closed after service on November 14th at Caesars Palace to make way for Amalfi by Bobby Flay. Flay’s new restaurant is Flay’s first Italian restaurant to be inspired by the chef’s travels to the Amalfi Coast in Italy. The menu ranges from very fresh fish and pasta to lighter antipasti. A fishmonger will oversee a seafood exhibition. Flay is already teasing green tomato risotto with scallops and osteria caviar; a lobster noodle with yellow tomatoes, basil and Calabrian chillies; Spaghetti with sea urchin and tomato; and paccheri with scorpion fish, cherry tomatoes and green garlic.

A new sports bar with a vintage feel is to be opened in Caesars Palace, with a view of the casino floor and the Vanderpump Cocktail Garden. The resort filed with Clark County a $ 2.6 million construction cost alone to renovate the 2,186-square-foot space in the Forum Food Court in Stadia Bar. The bar will open this spring with a 120-seat bar and lounge that gives the feel of a live sports arena.

David Chang’s highly anticipated Bāng Bar opens in the closed Pok Pok Wing area on the second floor of the Cosmopolitan of Las Vegas this spring. The Bāng Bar at the entrance to Urban Food Hall Block 16 is inspired by the Korean word for bread and offers a condensed menu of flatbreads that are grilled to order and filled with a selection of rotisserie Chicken, spicy eggplant or pork carved and then folded into a U-shaped shell or the office bowl with rice, pickled onions and cabbage as well as one of the three fillings.

Mr. Fries Man, a California cult food sensation that recently opened in North Las Vegas, is confirmed to replace the 1,350-square-foot Subway store on Flamingo Market Place. The compact menu with counter service specializes in portions with a big appetite and the possibility of individually designing each dish. Fried meals are served with cheese and a sauce of your choice, plus large portions of barbecue, bacon, ranch and chicken, lemon-garlic shrimp and shrimp, a combination of chicken, bacon and parmesan, and plates of honey-garlic shrimp and Steak. A plant-based meat option is also available.

A 3,000-square-foot Bob’s Big Boy opens at Skye Canyon Marketplace, taking up a comfortable end room, with plenty of outside space for one of the iconic grinning Big Boy statues. The retro roadside cafe franchise continues its 71-year tradition of indoor food stalls and seating. Famous for its eponymous “double-deck” burgers, thick old-fashioned milkshakes, and a full menu of classic American dishes, Bob’s Big Boy opened in Indian Springs des Terrible, a 45-mile drive northwest of this new location.
