The nine most-anticipated restaurant and bar openings this fall in Las Vegas

A pandemic hasn’t stopped Las Vegas from opening exciting new restaurants and bars. The list of fall openings in 2021 is a bit smaller, but that still means a new Mexican restaurant at Encore Las Vegas, a crazy Italian-American supper club at Cosmopolitan of Las Vegas, a tapas bar and nightclub at Resorts World, and much more. Off the Strip, a Corner Bar Management pub opens in Ferguson’s downtown, a trio have high hopes for their Henderson diner, and a former Masterchef winner opens his first restaurant. Here’s a look at nine new restaurants and bars debuting this fall.

Estimated opening: Mid-September

A playful Mexican coastal restaurant opens at Encore Las Vegas in September. The resort opens Casa Playa in the former Elio by superstar chefs from Enrique Olvera, Daniela Soto-Innes and Santiago Perez from ATM Group Space. Former Elio chef Sarah Thompson returns to showcase her own menu, while Wynn Resort’s mixologist Mariena Mercer Boarini created the daring cocktails and assistant general manager and agave expert Noah Arenstein created the robust mezcal and tequila Curated collection. The menu is inspired by the grilled seafood found in hidden playacitas along the Mexican coast. Thompson calls her menu a “culinary adventure” in which she tried to balance creativity and tradition.

Bar Zazu

Chef Nicole Brisson’s second restaurant, who also opened the Brezza at Resorts World, has a European café that serves hot and cold tapas, cheese and charcuterie, and sweet and savory pastries. The 140-seat restaurant next to Brezza promises wines from around the world, served by the glass, bottle and in flight, as well as European beers and cocktails.

The much anticipated nightclub opens at Resorts World with Tiësto on the decks. The 26,060-square-foot Zouk will be the focal point of the Las Vegas resort’s nightlife. The club offers the Capital Bar and Empire, which on certain nights and times of the year can operate as a complement to the main club or as separate venues. Zouk, with seating for 2,160, is said to be open Thursday through Saturday from 10:00 p.m. to 4:00 a.m.

Estimated opening: September 24th

Spiegelworld, the production company behind Absinthe, Atomic Saloon Show and Opium, opens Superfrico in the Cosmopolitan of Las Vegas on September 24th with food and drinks next to the Opium Theater in the former Rose. Rabbits. Lie. Place. Superfrico plans to dine in a place where anything goes all night, serving what has been dubbed “Italian-American psychedelic” cuisine. That means pizza, pasta dishes, steaks, seafood, small plates, typical desserts and “late night finals”. Cocktails, which are available as pre-filled cocktail bottles, as well as drinks in small batches are sold in Superfrico’s in-house Bottle-O retail store. The restaurant is divided into themed bars, lounges and dining rooms that connect the lines between the show and the restaurant. The performers come and go from their dressing rooms to the Opium Theater, through the kitchen and dining rooms of Superfrico.

Chickies & Petes

Chickie’s & Pete’s Crab House and Sports Bar debuts in October with its first expansion in the western United States. The Philadelphia-based chain is moving to the former Umami Burger area in Sahara Las Vegas with two bars, fireplaces, space for a DJ and a William Hill Sports Book. Guests can expect a self-described “upscale bar kitchen” menu that includes chowders, cheesesteaks, a white pate with lobster meat, crabs, clams and chicken wings. The brand’s most famous dish, the trademarked crab fries, consists of a serving of crinkle-cut French fries sprinkled with shrimp spices and served with a creamy white cheese sauce.

Boom Bang Delicatessen & Cocktails

A new breakfast, lunch, and dinner restaurant is moving from three culinary heavyweights to Valle Verde Drive this fall. Top Chef Season 2 alum Elia Aboumrad-Page, who helped open Joël Robuchon’s restaurant at the MGM Grand, joins Christian Page from Los Angeles-based Cassell’s Hamburgers and food and beverage specialist Tony Angotti, who is general manager at The Stirling Club worked. the Director of Food and Beverage at Red Rock Resort and other local restaurants to open Boom Bang Fine Foods & Cocktails. The restaurant offers a weekend brunch and baked goods such as pastries, savory pies, pizzas and sandwiches. Customers can go to a deli with souvenirs or take a seat at the indoor and outdoor bar and on the terrace. The starters range from hamburgers to pork knuckles and focus on ingredients such as wild and sustainable fish, antibiotic-free and grass-fed proteins and vegetable dishes with regional products.

Oasis in Rise

Estimated opening: autumn

Area15, the 200,000-square-foot entertainment complex west of the Strip, plans to open a cocktail bar with a ride that will take customers 131 feet in the air for seven minutes. Rise – An Elevated Bar Experience opens this fall with a 360-degree view of the city. Drivers can bring a cocktail or soft drink from a full-service bar called Oasis at the foot of the ride.

Larrea

Las Vegas Deejay, who became Executive Chef Shaun O’Neale, won Gordon Ramsay’s 2016 MasterChef cooking contest and took home $ 250,000 and a cookbook deal. O’Neale traveled the world, attended food festivals, events and cooked in various locations. Now the chef is ready to open his own restaurant to showcase his dishes. O’Neale has teamed up with mixologist and former Survivor: Samoa contestant Benjamin Browning to open Larrea and take over the former Blind Pig room in the Panorama Towers on Dean Martin Drive this fall. Larrea, a desert flower, represents the atmosphere that the restaurant and bar have planned. Using local suppliers such as Wagyu beef from Wells, Nevada, the seasonal menu starts with dishes such as wild mushroom risotto, Nevada Wagyu steak, scallop crudo, baja kampachi crudo, roasted bone marrow, and honey-varnished jidori chicken .

Peyote

Ryan Doherty and his company Corner Bar Management plan to open Peyote, a desert residence with retro charm that serves upscale American dishes, in the former La Monja room in Ferguson’s downtown. Doherty describes peyote as “a small, dreamy pub next to the restaurant. We’re not going to do what we normally do, ”he says, saying that food takes precedence over the DJ and music powered bars he owns. He says the restaurant transforms more of a lounge feel after dinner. A menu with heirloom tomato summer squash tartlets; Mini shrimp toast with wild smoked salmon roe; American country ham on toast, served with spicy pickled mustard seeds, carrot aioli and wild rocket, garnished with red sauce; and beet tartare comes from Kim Owens and Justin Kingsley Hall of Main St. Provisions.
