The usual place at Al Solito Posto
- 2 dashes of aromatic bitters
- 0.25 ounces Barolo Chinato
- 0.5 ounces. Amaro Cynar
- 0.75 ounces. Point of bitterness and month
- 5 ounces. Old Forester Bourbon enriched with quince
Install in a mixed glass. Add ice and stir. Load lightly. Garnish with caramelized apples, cinnamon, and brown sugar.
FROM THE BARTENDER DAVID BONATESTA
David was born and raised in Rome, Italy. At the age of 16 he began to work in the restaurant business as a barista and food runner. He had the opportunity to work at the 5-star Hotel De Russie in downtown Rome for bar manager Massimo D’addezio as a barback and bartender.
At 22, he moved to New York City, where he discovered his passion for bartending. His first job as a bartender was at Da Silvano in the West Village. Soon after, he joined the Soho House Family, where he worked as a bartender for a year and a half. Feeling the need for a fine dining experience, he began working with Paolo Novello in the Michelin-starred Lincoln restaurant on the Upper West Side.
He joined the NoMad family in early 2015. He worked as a bartender at both the NoMad and the restaurant bar and was thrilled to work with Leo Robitsheck and his team. In 2018 he flew across the country to open NoMad Downtown LA. After a successful year, David was given the opportunity to attend the opening of NoMad Las Vegas. He was thrilled to join the team that runs the hotel’s bar program.
In 2019 he moved back to the east coast to work for Jose Andres as the general assembly of the 2 Michelin-starred restaurant Minibar und Barmini in Washington DC. He moved back to Las Vegas in 2020 and joined the LEV Group team as Director of Beverage. He was part of the opening team of Al Solito Posto in Tivoli Village, an upscale Italian concept, and Harlo Steakhouse & Bar in Downtown Summerlin, a gourmet steakhouse. He oversees the bar program at La Strega Ristorante, which belongs to the same restaurant group. Right now he’s incredibly excited to continue to be part of new projects in Las Vegas with LEV.
